What does the Schnitzel have to do with charm

In the year 1683, the Turks were besieging Vienna for the second time and after two
months had nearly starved the inhabitants. The Viennese city elders came up with a
risky idea. They had all their remaining cattle slaughtered and then threw the
caracases outside the city walls. The Turks were amazed by how many supplies they
must still have and gave up and left.

This anecdote is typical of the character of the Viennese, who have a refined sense
of „inside“ and „out“. The Viennese carefully consider their effect—the impression
they give—and have thus developed the facade  to a high art, in the personal realm
as well as in architecture, and in the kitchen. In each realm this facade has a very
specific quality, or at least a particular charm.

In this sense, the Wiener Schnitzel is the embodiment of the Viennese soul - the
golden hue of the breadcrumbs on the outside and hidden on the inside, the tender
veal from the best part of the animal, the thigh. The careful disguise and secretive
transformation—a part of the Viennese culture.
